Streusel-Filled Coffee Cake

This recipe, an adaptation from a recipe my great grandmother gave me from when she first got married, is the best I've ever had. Period. It is perfectly sweet, fluffy, and just tastes all around wonderful. 


Mix:
3/4 cup sugar
1/4 cup soft shortening
1/4 cup warm water
1 tbsp egg replacer

Stir in:

1/2 cup vegan milk

Add:1.5 cups flour

2 tsp baking powder
1/2 tsp salt


Beat until mixed and slightly fluffy.

Make streusel:


Mix:1/2 cup packed brown sugar

2 tbsp flour2 tsp cinnamon
2 tbsp melted margarine
(Optional: 1/2 cup chopped nuts)

Spread half of the batter in a greased and floured 9" square pan. Sprinkle half of the streusel on top of the batter. Spread with remaining batter and sprinkle the rest of the streusel on top.


Bake at 375 for 25-35 minutes, or until a toothpick inserted in the center comes out clean.


Makes 9 servings.
